Method:
- For Cupcakes: Preheat oven at 180 degrees C or 350 degrees F. Line 20 muffin cups with paper liners or grease each cup with oil.
- In a large bowl mix sugar, all purpose flour, coca powder, baking powder, baking soda and salt.
- In another bowl whisk eggs, mashed banana, water, milk, oil and vanilla essence.
- Fold wet ingredients in dry ingredients. Spoon batter in cups, filling almost full and bake for 20-25 minutes or until a toothpick inserted in center comes out clean.
- Remove from oven and let it cool.
- For Cream Cheese Frosting: In a bowl, mix together cream cheese, butter and vanilla; gradually add powder sugar and combine nicely.
- Immediately frost cupcakes and top with your desired topping.
