Banana Split Cupcake

  Banana Split Cupcake:

 Ingredient:

  • For Cupcakes
  • Granulated sugar 1 ½ cups
  • All purpose flour 1 ¾ cups
  • Coca powder ¾ cup
  • Baking powder 1 ½ tsp
  • Baking soda 1 ½ tsp
  • Salt ½ tsp
  • Large eggs 2
  • Mashed banana 1 cup
  • Warm water 1 cup
  • Low fat milk ½ cup
  • Canola oil ½ cup
  • Vanilla essence 1 ½ tsp
  • For Cream Cheese Frosting
  • Low fat cream cheese 8 ounces (room temperature)
  • Butter 4 tbsp (room temperature)
  • Powdered sugar 4 cups
  • Vanilla essence 1 tsp
  • For Topping (optional)
  • Hot fudge
  • Sliced banana
  • Caramel

Method:

  • For Cupcakes: Preheat oven at 180 degrees C or 350 degrees F. Line 20 muffin cups with paper liners or grease each cup with oil.
  • In a large bowl mix sugar, all purpose flour, coca powder, baking powder, baking soda and salt.
  • In another bowl whisk eggs, mashed banana, water, milk, oil and vanilla essence.
  • Fold wet ingredients in dry ingredients. Spoon batter in cups, filling almost full and bake for 20-25 minutes or until a toothpick inserted in center comes out clean.
  • Remove from oven and let it cool.
  • For Cream Cheese Frosting: In a bowl, mix together cream cheese, butter and vanilla; gradually add powder sugar and combine nicely.
  • Immediately frost cupcakes and top with your desired topping.
